Instructions

Preheat oven to 350 

Grease 2 9×13 dish

In a bowl mix chicken, cream cheese, cheese, garlic, beans, corn, sweet potatoes

Make a roux from butter and flour

Add in cheese stir until melted. Stir in other ingredients

Stuff tortillas with chicken filling 

Roll up tortillas into a burrito

Place into baking dishes

Top with the sauce and cheese

Bake 22-25 minutes 

Tips

If you like super saucy enchiladas, double the sauce and coat them throuroughly

Use taco tortillas for smaller portions, for larger portions and less rolling, use large burrito tortillas

  • 15 Tortillas
  • 1 cup Monterey Jack

Sauce

  • 1/4 cup Butter
  • 1/4 cup Flour
  • 2 tbsp Taco seasoning
  • 1 tsp better than bullion
  • 1.5 cups Monterey Jack shredded
  • 1 cup Sour cream
  • 1 4 oz can Chilis
