Black Bean And Sweet Potato Enchiladas

Ingredients
  

Inside

  • 1 1/2 cup Sweet potatoes
  • 1 cup Black beans
  • 2/3 cup Corn
  • 3 cups Chicken cooked
  • 8 oz Cream cheese
  • 1 tbsp Garlic powder
  • 1 cup Monterey Jack

Outside

  • 15 Tortillas
  • 1 cup Monterey Jack

Sauce

  • 1/4 cup Butter
  • 1/4 cup Flour
  • 2 tbsp Taco seasoning
  • 1 tsp better than bullion
  • 1.5 cups Monterey Jack shredded
  • 1 cup Sour cream
  • 1 4 oz can Chilis

Instructions
 

  • Preheat oven to 350
  • Grease 2 9x13 dish
  • In a bowl mix chicken, cream cheese, cheese, garlic, beans, corn, sweet potatoes
  • Make a roux from butter and flour
  • Add in cheese stir until melted. Stir in other ingredients
  • Stuff tortillas with chicken filling
  • Roll up tortillas into a burrito
  • Place into baking dishes
  • Top with the sauce and cheese
  • Bake 22-25 minutes
