Put all ingredients except pumpkin seeds into a blender and combine

- 1 cup coconut milk or heavy cream
- 4 cups Vegetable broth
- 1 tsp Cinnamon
- Salt & pepper to taste
- 1/4 cup Pumpkin seeds toasted (optional topping)
Instructions
- Boil the carrots until soft, drain and allow to cool slightly
