Pumpkin Carrot Soup

Ingredients
  

  • 2 cups Carrots
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 1 Onion sliced
  • 2 tbsp Parsley or chives
  • 1 can Pumpkin puree
  • 1 cup coconut milk or heavy cream
  • 4 cups Vegetable broth
  • 1 tsp Cinnamon
  • Salt & pepper to taste
  • 1/4 cup Pumpkin seeds toasted (optional topping)

Instructions
 

  • Boil the carrots until soft, drain and allow to cool slightly
  • Put all ingredients except pumpkin seeds into a blender and combine
  • Serve warm, top with pumpkin seeds if desired
