I’ve never been a huge soup eater, but my husband loves soup and asked me to make it more often. This is an incredibly simple soup! And this tortellini soup is amazing. My kids even love it and that’s a win in my book.
If you don’t have an instant pot don’t worry! You can still make this recipe with either a crockpot or on the stove top.

Ingredients For Tortellini Soup
This soup is made out of only 5 ingredients: tortellini, canned tomatoes, ground meat, spinach, and cream cheese.
Tortellini– you can use fresh, frozen or dried tortellini.
Canned tomatoes– I like to use fire roasted tomatoes, but Italian or plain tomatoes work as well.
Ground meat– you could probably use meatballs or even kielbasa. I like to use cooked plain ground beef.
Spinach– I use frozen spinach but fresh can be used too.
Cream cheese– a generic block.
Directions For An Instant Pot
- Dump all of the ingredients except the cream cheese into your instant pot
- Set your instant pot on manual for 5 minutes
- Once it has finished cooking have it quick release
- Add in the cream cheese chopping it into chunks can help it to be distributed better
- Enjoy!

Directions For A Crock Pot
- Dump all of the ingredients except the cream cheese into your crock pot
- Set your crock pot on low for 4-6 hours
- Once it has finished cooking add in the cream cheese chopping it into chunks can help it to be distributed better
- Enjoy!
Directions For Cooking On A Stovetop
- Throw everything except the cream cheese in a pot on the stove on medium high
- Once the water is boiling let it simmer for 30 minutes
- Add the cream cheese and simmer for another 3-5 minutes
Tips
- Add more veggies for more flavor, onion, carrots, corn, celery, etc.
- Try different meats- kielbasa, ground beef, ground pork, Italian sausage, etc.
- Add 1/2 tbsp of Italian seasoning for more flavor.
- Add 1/2 tbsp of minced garlic for even more flavor!
- Add 1/2 cup of diced onion.
- For more flavor try using bullion, broth, or stock instead of water.
Whole30 Option
Yes! There’s an easy way to make this Whole30! It doesn’t include tortellini, but it is still a tasty soup!
Reduce water by 3 cups
Make sure your diced tomatoes are Whole30 compliant
Replace tortellini with 3 cups of diced sweet potatoes
Replace cream cheese with coconut cream
Make sure your meat has no added sugar
