Sausage, Chicken, And Shrimp Gumbo

I’m not from the south, but I love a big bowl of Gumbo. I made this recipe based off of several recipes from people who do live in the south.  This recipe is loaded with veggies and seasonings for a delicious meal. Gumbo and Jambalaya are quite similar, the difference is that Jambalaya is made with rice cooked into it while Gumbo is not made with the rice but usually served over it. While I prefer to make this recipe over the stove, I have adapted it to an instant pot as well as a crock pot.

Ingredients

Chicken– I like to make my gumbo easy, so I sous vide my chicken before beginning, shred it and then add it in last

Shrimp– make sure it’s cooked, deveined, without a tail, you can get raw shrimp and add it to the crock pot or instant pot to cook 

Andouille sausage– Andouille will make it quite spicy, if you prefer less spice, I would use Kielbasa, however you may lose some of the authentic flavor

Oil– to cook the onion and garlic in, if you are making this in a crock pot or instant pot you don’t necessarily need this

Onion– Onion is an amazingly versatile vegetable that provides great flavor, dice it as small as you want, if you like larger chunks, feel free to rough chop it

Garlic– What is a recipe without garlic, if you love garlic you can double it, I use pre minced garlic

Green pepper– green pepper will add extra texture and color, make sure it’s diced

Red pepper– dice it up and a red pepper will give some extra texture and color

Celery– a great crunch can come from this if it’s not cooked enough, make sure it’s tender

Frozen Okra– gumbo wouldn’t be gumbo without okra, where I live you can’t get it fresh so frozen is the way to go

Diced Tomatoes– I like to get a can of diced tomatoes, but if you prefer, you can dice them yourself

Chicken Broth– I use better than bullion for my broth and sometimes I don’t even need to add 2 cups worth of water.  If you are making it in the crock pot, you may need more

Cajun spice– this spice is the essential spice for gumbo

Thyme– while thyme is typically in cajun spice, a bit more will be better

Onion powder– even though onions are in this recipe, a little onion powder never hurt anything

Black pepper– if you prefer to omit this it won’t effect too much

Bay leaves– don’t forget to remove these before serving!

Rice– serve the gumbo over your cooked rice

Instructions

Crock Pot

  • Combine all ingredients (except rice and meats) to the crock pot
  • Cook for 6- 7  hours
  • During the last hour add the meats
  • Serve over rice

Stove Top

  • Saute onion and garlic
  • Add peppers and celery
  • Stir in tomatoes, okra and broth
  • Add meats and seasonings
  • Cook on the stove for 40-90 minutes
  • Serve over rice

Instant Pot

  • Add all ingredients (except rice and meats) to the instant pot
  • Cook in an instant pot for 10 min
  • Add the meats in
  • Serve over rice

Tips:

Try starting this with a roux of oil and flour for a thicker sauce

Add Parsley & green onions as a garnish

Whole30 Option

Ensure the oil is Whole30 compliant such as coconut oil or olive oil

Choose sugar free andouille sausage

Check your tomatoes for Whole30 compliant ingredients

Omit the rice

Ingredients
  

  • 1 lb Chicken cooked
  • 1 lb Shrimp cooked, deveined, without tail
  • 1 lb Andouille sausage or Kielbasa
  • 1 tbsp Oil
  • 1 Onion diced
  • 1 tbsp Garlic clove minced
  • 1 Green pepper diced
  • 1 Red pepper diced
  • 3 Ribs Celery chopped
  • 16 oz Frozen Okra
  • 1 can Diced Tomatoes
  • 2 cups Chicken Broth
  • 1 tbsp Cajun spice
  • 1 tsp Thyme
  • 1/2 tsp Onion powder
  • 1/4 tsp Black pepper
  • 4 Bay leaves
  • 2 cups Rice cooked

Instructions
 

Crock Pot

  • Combine all ingredients (except rice and meats) to the crock pot
