My husband claims he doesn’t like chicken soup, but he will devour this. Chicken noodle soup is definitely a comfort food for me. I love that this recipe has potatoes in it making it hardier and adding more comfort. If you are on whole30 you won’t be able to have noodles in this, but don’t worry, it will still taste incredible!
I actually made this soup for the first time when my husband and I did whole30 and I just added the noodles to the recipe later on to make it stretch.
Soups are very forgiving so exact amounts aren’t incredibly important.

Ingredients for chicken soup
This soup is composed of celery, carrots, potatoes, chicken, onion, broth, noodles, and spices.
Carrots and celery– classics in many soup recipes. I have definitely added different types of carrots and in different amounts depending on my mood and how I like it. I love having pretty decent chunks of celery in my soup.
Potatoes– I don’t peel mine. The best kind of potatoes for this recipe are red potatoes. I’ve used many different kinds of potatoes for this recipe including russet, yellow, and baby potatoes, but red is definitely the best.
Garlic– I like to keep minced garlic in my fridge. This adds a lot of flavor.
Onion– I’ve tried a couple different styles of how my onion is chopped but to me it doesn’t really matter. Large chunks or small I feel like it’s mostly to add flavor so if you like big chunks of onion go with that. If you want it to just flavor your soup then go with finely diced onions.
Chicken– I always go with precooked and frozen chicken and add it towards the end of the cooking time so it doesn’t get over cooked.
Chicken broth– I actually use better than bullion. I don’t like how much space boxes of broth take up and I don’t have the time or space to make or store my own broth. I love that I can control how much or little flavor I want my food to have by using the paste in a small jar. It also means I don’t end up with half used containers of broth in my fridge.
Noodles– omit for whole30. You can use any kind. I’ve used macaroni, fettuccini, farfalle, and penne. But for best results I think egg noodles make it more authentic. I’ve made the noodles separately and I’ve cooked them in the soup. If you plan to cook them in the soup, another cup of broth will make sure your soup won’t be too hearty and won’t have enough broth to call it a soup.
Spices– including rosemary, thyme, parsley, salt, and pepper. I don’t usually do exact measurements. Typically I go a little Ratatouille and put as much or little as I want and smell the soup to decide what it needs more of.
Instructions for Instant Pot
Add all ingredients to the instant pot
Set to manual for 5 minutes
Quick release when the time is up
Instructions for Slow Cooker
Add all ingredients to the crock pot
Cook on low for 6-8 hours or on high for 4-6 hours
Instructions for Stove Top
Sauté carrots, celery, garlic, and onion until onion begins to be soft about 6 minutes.
Add in broth, potatoes, chicken, noodles and spices.
Simmer for 20- 30 minutes until the potatoes and carrots are soft.
Tips for chicken soup
- To make the soup Whole30 omit the noodles, reduce the broth by 1 cup, and make sure your broth is compliant.
- Try including more veggies for different flavors. Try corn, spinach, cauliflower, or even beets.
- Add 1/2 tsp basil for more flavor.
- Add 1 tsp turmeric.
- Try adding 1/2 tsp oregano.
- Add 1 bay leaf.
- Try turkey instead of chicken.

Ingredients
- 2 chicken breasts cooked & chopped (approximately 2 cups)
- 2 cups carrots chopped
- 7 stalks celery chopped
- 5 potatoes red cubed
- 1 onion diced
- 3 tsp garlic minced
- 4 cups broth
- 1 tbsp parsley
- 1 tsp salt
- 1/2 tsp pepper
- 1 1/2 tsp thyme
- 1 tsp rosemary
- 3 cups noodles cooked (omit for whole30)
Instructions
- Sauté carrots, celery, garlic, and onion until onion softens. About 5 minutes
- Add broth, potatoes, chicken, and spices
- Simmer for 20 minutes or until potatoes are cooked
