Whole30 Sweet Potato Skillet

Ingredients
  

  • 1 tbsp coconut oil
  • 2 lbs ground beef
  • 1 onion thinly sliced
  • 2 tbsp garlic minced
  • 1 cup beef broth
  • 1 tbsp basil
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp ginger
  • 1/2 tsp black pepper
  • 3 cups sweet potato diced
  • 1 cup carrots diced
  • 2 cups Brussels sprouts quartered

Instructions
 

  • In a large skillet cook ground beef over medium heat until throughly cooked
  • Make a hole in the center and add garlic and onions
  • Once the onions are translucent add in the spices and broth
  • Add the vegetables, cover and cook until the vegetables are soft (about 20 minutes)
