Whole30 Basil Chicken Curry

Ingredients
  

  • 3 tbsp garlic minced
  • 1 onion thinly sliced
  • 4 chicken thighs cooked and diced
  • 2 cans coconut cream
  • 3 tbsp basil
  • 3 tbsp parsley
  • 1 tbsp curry powder
  • 1 tbsp minced ginger
  • 1/2 tsp chili
  • 1 jalapeño diced
  • Salt & pepper to taste

Instructions
 

Stovetop

  • Sauté garlic and onions until translucent. Add all other ingredients
  • Allow to simmer for 20-30 minutes
  • Serve over cauliflower, diced potatoes, or sweet potatoes. If not on whole30 serve with rice 

Slow cooker

  • Add all ingredients to the slow cooker
  • Cook on low for 2-6 hours
  • Serve over cauliflower, diced potatoes, or sweet potatoes. If not on whole30 serve with rice
