Sweet Potato Casserole

Ingredients
  

  • 4 large sweet potatoes
  • 2 tbsp coconut oil
  • 1/4 cup maple syrup
  • 3 tbsp sugar
  • salt to taste
  • cinnamon to taste

Topping:

  • 2 cups pecans
  • 1/3 cup flour
  • 1/2 cup sugar
  • 5 tbsp coconut oil
  • cinnamon to taste

Instructions
 

  • Peel and cut sweet potatoes
  • Boil for 15 minutes (drain)
  • Blend ingredients together
  • Pulse topping ingredients in a food processor
  • Preheat oven to 375
  • Add crumble topping and bake for 30-35 minutes
