Fried Rice

Ingredients
  

  • 1 lb rice cooked & one day old
  • 3 slices bacon optional
  • ½ cup peas
  • ½ cup carrots diced
  • 1/2 onion chopped
  • 2-3 eggs
  • 3 tbsp soy sauce or coconut aminos
  • ½ tsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp garlic minced
  • 1/4 tsp ginger
  • pepper
  • salt
  • green onions optional for garnish

Instructions
 

  • Cook rice at least 1 day in advance
  • Cook bacon (if desired)
  • Chop all vegetables
  • Saute garlic and onion with sesame oil
  • Add other vegetables and allow them to cook
  • Add rice, soy sauce, oyster sauce, and ginger- stir occasionally
  • Add chopped bacon (if desired)
  • Whisk eggs together in a small bowl or cup
  • Make a small space in the middle of the pan to add eggs
  • Scramble them until they are cooked
  • Mix everything together
  • Serve warm
