Instructions
In a large skillet over medium heat, sauté the garlic, ginger, and onion in the oil until the onions are translucent
Add the sweet potato, tomato paste, diced tomatoes, and broth allow to simmer for 10 minutes
Stir in the peanut butter and beans, and siracha if desired
Add the spinach until warmed through
Remove from heat and top with serving suggestions if desired
