African Peanut Soup

Ingredients
  

  • 1 tbsp oil
  • 1 onion diced
  • 1 tbsp ginger paste
  • 2 tbsp minced garlic
  • 1 sweet potato peeled, diced, and cooked
  • 2 tbsp tomato paste
  • 15 ounces crushed tomatoes
  • 3 cups broth
  • 1 cup peanut butter
  • 15 ounces small white beans
  • 1 cup spinach frozen
  • 1 tablespoon sriracha optional
  • salt to taste
  • chopped peanuts serving suggestion
  • minced cilantro leaves serving suggestion
  • green onions serving suggestion

Instructions
 

  • In a large skillet over medium heat, sauté the garlic, ginger, and onion in the oil until the onions are translucent
  • Add the sweet potato, tomato paste, diced tomatoes, and broth allow to simmer for 10 minutes
  • Stir in the peanut butter and beans, and siracha if desired
  • Add the spinach until warmed through
  • Remove from heat and top with serving suggestions if desired
