If you’re on Whole30, I’m sure sweet potatoes are on your radar. They’re great at providing you with nutrients and substance, while you endeavor to eat closer to whole foods. This Whole30 sweet potato skillet is filling and easy.

Ingredients
Coconut oil- this whole30 approved oil is perfect for this dish
Ground beef- choose the kind you enjoy. I like to cook my ground beef ahead of time and freeze it until I’m ready to use it
Onion- Onions are a basic ingredient that helps to stretch the meal and add great flavor. Thinly slice them so they don’t over power each bite
Garlic- I get a huge jar of minced garlic from Costco and add as much as I want, you can’t go wrong with garlic
Beef broth- If you don’t have beef broth, you can use bullion, or stock
Seasonings- seasonings can be used generously, the ones for this skillet include, basil, onion powder, salt, and black pepper
Ginger- I use about 1 tsp of ginger from a tube, but you can use fresh, or powdered as well
Sweet potato-the star of this skillet, your sweet potatoes should be diced into about 1/2 inch cubes
Carrots- carrots aren’t necessary, but they add a slight sweetness
Brussels sprouts- while brussels sprouts get a bad rap sometimes, these really go with the sweet potatoes for a healthy addition to your meal. Enjoy them quartered so they are in more bites of your skillet
Instructions
In a large skillet melt coconut oil
Cook ground beef over medium heat until thoroughly cooked
Make a hole in the center and add garlic and onions
Once the onions are translucent add in the spices and broth
Add the vegetables, cover and cook until the vegetables are soft (about 20 minutes)

Ingredients
- 1 tbsp coconut oil
- 2 lbs ground beef
- 1 onion thinly sliced
- 2 tbsp garlic minced
- 1 cup beef broth
- 1 tbsp basil
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp ginger
- 1/2 tsp black pepper
- 3 cups sweet potato diced
- 1 cup carrots diced
- 2 cups Brussels sprouts quartered
Instructions
