Whole 30 Rich And Tender Beef Stew

If you are planning a whole 30 and looking for an easy recipe this beef stew is for you. It will take some planning to make in a crock pot since the cook time is quite long, but it’s well worth it. The meat comes out tender and delicious! The instant pot or stove top method will also taste great, but the meat won’t be as tender. Full of many veggies and just a handful of seasonings, this recipe is super simple.

Beef stew

Ingredients

Chuck roast– Chuck roasts are cut from the shoulder and are naturally quite tender when made into stew

Oil– I use extra virgin olive oil but avocado oil would also work

Mushrooms– I use cremini and just slice them, but if you want them smaller you can dice them 

Onion– what recipe is complete without a chopped onion. I like mine to be big chunks 

Celery– I like thick chunks of celery, but you can definitely slice them thin 

Carrots– I cut them in half then slice them 

Sweet potatoes– dice then up. You can also use yams or even regular potatoes if you prefer 

Broth– you can make your own or use chicken, veggie, or beef but beef will give you the best flavor – make sure it’s whole 30 compliant

Salt– to bring out the flavor, salt is always a great choice

Thyme– thyme is subtle but delicious especially with rosemary 

Rosemary– rosemary is more powerful so be careful to not add too much but it will go well with the thyme 

Pepper-add pepper to your taste preference 

Slow cooker

  • Add meat to the bottom
  • Add everything else on top
  • Cook on low for 10-12 hours 
  • Shred beef

Instant pot 

  • Chop meat into 1 ½ inch chunks 
  • Sear meat
  • Add meat to the instant pot 
  • Add all other ingredients 
  • Cook for 30 minutes on high 
  • Slow release for 10 minutes 
  • Shred the meat 

Stove Top

  • Chop meat into 1 ½ inch chunks 
  • In a large pot or pan sear meat
  • Add all other ingredients 
  • Simmer on low for 1 hour 
  • Shred the meat

Tips

  • If you are not on whole 30 and want to make this heartier, add 1 ½ cups of barley
  • Try golden potatoes instead of sweet potatoes
  • Add some parsley for garnish

  • 2 tbsp oil
  • 8 oz mushrooms chopped
  • 1 onion sliced
  • 4 carrots chopped
  • 3 stalks celery diced
  • 2 sweet potatoes diced
  • 6 cups broth
  • 1 tsp salt
  • 1 tbsp thyme
  • 1/2 tbsp rosemary
  • Pepper to taste

Instructions
 

Slow cooker

  • Add meat to the bottom
