If you want to meal prep before baby number 3, I highly recommend not trying to do 50 meals in 3 hours while you’re lugging a baby around in your tummy. I suggest that you instead try to set up 2-4 sessions of 30 minutes to 1 hour 30 minutes maximum. During each of these sessions you should try to accomplish one type of meal. Another method is to double each recipe for one or two weeks before baby and freeze the extra one for after baby. Here’s what I did to prepare for my 3rd kid.
Burritos
For my first session I made three different kinds of burritos.
Breakfast- eggs, cheese, sausage, sour cream, diced potatoes, peppers, onion, ham
Bean & cheese- cheese, beans, queso
5 layer- beef, cheese, beans, queso, sour cream
Related: Refried Beans
To Make These I Needed The Following
- Eggs
- Beef
- Cheese
- Refried beans
- Sour cream
- Diced Potatoes
- Peppers
- Onion
- Ham
- Breakfast sausage
- Queso
I started making my refried beans in the instant pot. I chopped everything, then I cooked up the potatoes. I cooked the peppers and onion together. I used some cooked frozen beef I already had. I cooked the eggs. Once everything was cooked, I started assembling the burritos.
Chicken
For my next cooking session I made chicken. For me it’s a very low involvement
I sous vide chicken and then shred it and freeze it flat. It can be used for the following recipes:
- Gumbo
- Chicken noodle soup
- Alfredo
- Cool ranch tacos
Pork
I don’t make too many meals with pork, but I love pulled pork. So for my third session I cooked up a batch in my instant pot and packed it into quart freezer bags and freeze it flat. These can be used for:
- Sandwiches
- Totchos or nachos
- Burritos
- Mac & cheese
Beef
For my fourth and last session, I made ground beef.
I bought a 10 lb roll and cooked it all up. I then let it cool and froze it flat.
It can then be used in the following recipes:
- Asian lettuce wraps
- Tacos
- Burritos
- Sweet curried beef
- Tortellini soup
- Spaghetti
- Sloppy joes
