If you love chocolate and peanut butter, this peanut butter stuffed cookie is for you! They’re stuffed with peanut butter in a perfect cookie shell, and if you love peanut butter be sure to add the optional peanut butter topping!

Ingredients
Flour – necessary to keep the cookies from being mushy balls with no structure. The amount of flour in this recipe keeps them chewy.
Sugar – the sweetener for most cookies. My cookies have a lot more brown sugar than regular sugar causing the cookie to have a more chewy texture.
Butter – the fat in these cookies that make them tender. I like to microwave my butter for 10 second increments until it reaches “room temperature” which is when you can just poke your finger in but it doesn’t yet feel warm to the touch
Eggs – the binding agent and help provide structure to the cookie. These cookies have two eggs which seems to be the magic number for most cookies.
Vanilla– I read once to always double the vanilla in a recipe, but you won’t need to here. It already has plenty of vanilla extract.
Cornstarch – my secret ingredient. It adds more fluff to the cookie. It makes the cookies crumbly and tender.
Baking soda – helps the cookies rise the perfect amount.
Cocoa Powder– for the chocolate flavor
Peanut Butter– for the filling peanut butter is needed, if you want to try something different you can try Nutella
Powdered Sugar– for the filling to not spill out
Peanut Butter Chips– melted, these are an optional topping for decoration and more peanut butter

Instructions
- Preheat oven to 350
- Cream the butter and sugar
- Add eggs and vanilla
- Stir in cornstarch, baking soda, baking powder, and cocoa powder
- In a separate bowl mix the filling ingredients together
- Scoop the dough and flatten into discs
- Use a ½ tbsp scoop to scoop the filling
- Put the filling on top of a disc
- Put a disc on top of the filling
- Press the sides together
- Complete for all the dough and filling
- Bake for 9-13 minutes
