This sweet potato casserole is dairy free. It’s moist and delicious. It’s also sweet without being sickeningly sweet. By using coconut oil, this sweet potato casserole is vegan and sure to be a hit at your next party!

Ingredients
- Sweet potatoes- you can use yams, or sweet potatoes either way it will be delicious
- Coconut oil- if you are not a vegan I would still recommend using coconut oil, butter would change the texture
- Maple syrup- maple syrup gives it a sweet maple flavor
- Sugar- if you want to avoid processed sugar, you can omit it or substitute it with coconut sugar, or a granular stevia
- Salt- salt pulls out flavors, however I have frequently omitted it from this recipe without missing out on much
- Cinnamon- Cinnamon is necessary, I like to start with at least 1 tbsp and then add more until I like the taste
Topping
- Pecans- the flavor of pecans in this is what works with the sweet potatoes, and the cinnamon. I have tried to use other nuts, but pecans are the best choice
- Flour- if you need to be gluten free, you can use a gluten free flour, but it may slightly alter the texture
- Sugar- you need to have the sugar in this part, but you can use coconut sugar or a granular stevia
- Coconut oil- don’t try to use butter to replace this as it will disrupt the texture
- Cinnamon- I start with 1/2 tsp and sometimes end there depending on the taste

Directions
Peel and cut sweet potatoes
Boil for 15 minutes (drain)
Blend ingredients together
Pulse topping ingredients in a food processor
Preheat oven to 375
Add crumble topping and bake for 30-35 minutes
Tips
- Make a day ahead and then the day of bake 20 minutes without topping then bake another 10 minutes with the topping on
- Optional add 5 tbsp orange juice to give it a zingy flavor
- Use an immersion blender to blend
Whole30 Option
The Whole30 option isn’t very sweet, instead it’s naturally sweetened.
Add 1 peeled and diced apple and boil with the sweet potatoes
Omit maple syrup
Omit sugar
Omit flour or replace with arrowroot powder
