If you enjoy shepherd’s pie, you are going to love this breakfast shepherd’s pie. It’s great for feeding a crowd or enjoying for a few breakfasts.
Ingredients
Sausage- cook your sausage ahead of time or use cook and serve sausages and chop them up
Bacon- I get a big bag of pre cooked and chopped bacon. You can also cook and chop your own bacon
Frozen veggies- I always use peas and carrots and then add whatever else I have like corn, or green beans
Worcestershire sauce- this sauce adds some great flavor
Milk- what ever kind of milk you prefer, it gets added to the scrambled eggs
Eggs- these will be scrambled
Cheese- add it to the scrambled eggs, it can be optional, but it adds some great texture
Seasoning- Salt & pepper is added to the scrambled eggs, and the parsley, rosemary, and thyme is added to the meat and veggie mixture
Butter- Butter is delicious and used for cooking the scrambled eggs and for topping the mashed potatoes
Mashed potatoes- you can make real mashed potatoes or use 2 packages of instant potatoes
Instructions
Preheat oven to 350
Sauté meat with veggies and seasoning until well combined
Prepare a 13×9 pan
Pour veggie meat mix into the pan
In a large bowl combine eggs, milk, salt, and pepper
In a hot pan melt butter
Pour the egg mixture into the hot pan
Stir constantly until eggs are cooked
Add cheese and melt
Add the egg cheese mixture to the top of the meat veggie mixture
Spread the mashed potatoes on top
Top with cubes of butter
Bake at 350 for 10-20 minutes or until the butter is melted

- 1 cup milk
- 12 eggs
- Salt & pepper to taste
- 4 tbsp butter
- 1 cup shredded cheese
- 1 tsp Parsley
- 1 tsp Rosemary
- 1 tsp Thyme
- 2 packets Instant mashed potatoes made per instructions
- 1/4 cup butter diced
