Quick Egg Drop Soup Recipe Anyone Can Make

Egg drop soup is a simple, comforting, and budget-friendly meal that comes together fast. With just a handful of pantry ingredients, you can make a cozy bowl of soup in under 30 minutes — perfect for busy days or chilly weather. Here’s how to make it.

Ingredients

Water- most soups contain water or some sort of liquid, this soup’s base is water

Vegetable broth concentrate- If you wanted to replace the concentrate and water with a vegetable broth or bone broth it would work fine as well

Celery- grate your celery so it is small and easily fits in a spoon of soup

Carrot- grate your carrots so they are fine and scooped up in a spoon well

Cabbage- you only need one or two leaves that are chopped or sliced thinly

Eggs- this is the protein and main star of the soup, once added it will cook

Salt & pepper- for some seasoning on the eggs, these spices will make the eggs pop

Green onion- an optional ingredient to garnish the soup and add a tiny bit of flavor

Instructions

In a large pot, boil water

Add in carrot, celery, and cabbage allow it to cook

Whisk eggs, salt, and pepper in a separate bowl 

While stirring continually, slowly drizzle the eggs into the pot

Remove from heat and serve topped with green onion 

Tips

  • You can make a simpler version with just broth and eggs 
  • You can add grated onion or other vegetables for more flavor
  • Try adding ground ginger for a slightly spicy flavor
  • Try adding a slurry of cornstarch (1 tbsp cornstarch and 2 tbsp water or broth) to make the broth thicker and more opaque
  • Try sauteing the veggies in sesame oil before boiling or just adding the oil for added depth
  • Add 1/2 tsp MSG instead of salt for a more authentic flavor
  • Consider 1/2 tsp turmeric for a yellow color
