Efficient Egg Curry For A Quick Weeknight Dinner

Ingredients

Oil or butter – The base for sautéing and releasing the flavors of the spices.

Onion – Adds natural sweetness and depth to the sauce.

Garlic – Brings aromatic, savory notes that round out the flavor.

Ginger paste – Adds brightness and a gentle heat.

Ground coriander – Lends a citrusy, earthy layer to the curry.

Ground cumin – Adds warmth and nuttiness.

Ground turmeric – Gives a golden color and subtle bitterness that balances the coconut milk.

Coconut milk – Creates a rich, creamy sauce that’s naturally dairy-free.

Salt & pepper – Enhances all the flavors.

Hard-boiled eggs – The protein centerpiece, soaking up the fragrant curry sauce.

Instructions

Sauté onions, ginger, and garlic until onions are translucent 

Add in seasonings and coconut milk

Add in eggs  until coated in the sauce

Serve over rice if desired

  • 1/2 tbsp garlic minced
  • 1 teaspoon ginger paste
  • 1 tablespoon ground coriander
  • 2 teaspoons ground cumin
  • 1 tablespoon ground turmeric
  • 1 can coconut milk 13 oz
  • salt & pepper to taste
  • 6 hard-boiled eggs peeled & halved

Instructions
 

  • Sauté onions, ginger, and garlic until onions are translucent

  • Add in eggs  until coated in the sauce
  • Serve over rice if desired
