Ingredients
Rice- What is breakfast fried rice without rice? I use jasmine rice and make it the day or two beforehand. You can use fresh rice, but it usually isn’t quite the same
Soy sauce- for flavor, soy sauce is almost always used in fried rice, if you need to you can use coconut aminos for a gluten free option
Sesame oil- again for flavor, you can omit if needed
Veggies- I use a bag of frozen peas and carrots for a quick option, you can use corn, green beans, asparagus, carrots, or anything you have on hand. I also like to add some chopped broccoli
Eggs- these are to be scrambled and mixed into the fried rice
Milk- milk with scrambled eggs helps to make them fluffy, you can omit if you want
Cheese- cheese is added to the scrambled eggs for taste, and texture, you can use whatever cheese you prefer, but cheddar is a good option
Bacon- I use the kind from Costco in the big bags that’s precooked and chopped
Butter- this is used to make sure the eggs don’t stick to the pan, you can use oil instead if desired
Instructions
Add 2 tbsp butter to a frying pan over medium high heat
Stir the milk, eggs, salt, and pepper together in a small bowl
Pour the egg mixture into the pan with butter
Stir the eggs until they are scrambled and fully cooked
Add the cheddar cheese and stir in until melted
Take the eggs out of the pan and set aside
Add the cooked rice to the pan and add sesame oil and soy sauce
Stir until combined
Add the vegetables and bacon and cook until heated through
Add the eggs and combine in a serving dish
