Green Mac N' Cheese

Ingredients
  

  • 1/2 cup Cauliflower florets
  • 2 cups fresh Spinach or 1 cup frozen
  • 1 small Avocado
  • 1/2 cup Cheese
  • 2 tbsp Butter
  • 1/4 cup Milk
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 tbsp Garlic minced
  • 1/2 tsp Mustard powder
  • 1 tsp Oregano
  • Optional thyme
  • Optional rosemary
  • 1 lb Noodles use chickpea noodles for more protein or Miracle Noodles for less calories

Instructions
 

  • Cook cauliflower by steaming, boiling, or roasting
  • Sauté spinach until wilted
  • Add veggies and avocado to a blender or use an immersion blender until well combined
  • Cook noodles to their instructions
  • Melt butter, milk, and cheese on the stove and add seasonings
  • Add in veggies and stir until combined
  • Pour over the pasta or combine with pasta to serve
