Yellow Curry

Cook Time 1 hour

Ingredients
  

  • 1 lb chicken
  • 3 tbsp curry powder
  • 1 tsp turmeric powder
  • 1/2 tsp ground coriander
  • 2 tsp salt
  • 1 tsp sugar
  • 3 cans coconut milk 15 oz
  • 2 tbsp butter
  • 2 garlic cloves crushed
  • 4 cups potatoes
  • 1 sweet onion medium diced

Instructions
 

Directions For Slow Cooker

  • Add all ingredients except chicken into the slow cooker
  • Cook on low for 6-8 hours or on high for 4-6 hours
  • Add the chicken in the last two hours of cooking
  • Serve over rice

Directions For Instant Pot

  • Add all ingredients except coconut milk and coconut cream to the instant pot
  • Add in ½ cup vegetable broth
  • Pressure cook for 6 minutes
  • Slow release for 5 minutes
  • Serve over rice

Directions For Stove Top

  • Cook chicken in a pan for 5-10 minutes, until cooked through
  • Add all other ingredients and bring to a boil for 2 minutes
  • Reduce to a simmer
  • Cook until potatoes are cooked through about 20 minutes
  • Serve over rice
