Peanut Butter Coated Peanut Butter Balls

These little balls of yum are basically a peanut butter lovers dream. They’re basically buckeyes, but with the added benefit of peanut butter to coat them. I made this recipe when I was pregnant and craved more peanut buttery buckeyes but I couldn’t find a recipe anywhere for what I was looking for! So if you love peanut butter these peanut butter balls are for you!

Peanut butter balls

Ingredients

Peanut butter– what would these be without peanut butter

Powdered sugar– to make these sugary sweet powdered sugar is the perfect fluffy ingredient

Butter– this makes the whole thing stick together, you will need some for the inside and some for the coating, for both the inside and outside it should be almost melted

Vanilla– for flavor enhancement vanilla always does the trick

Salt– to bring out more of the peanut flavor

Graham crackers– these are optional, they will make the balls more textured but not adding them in will be fine

Peanut butter chips– To make the outside a peanut butter masterpiece, you need peanut butter flavored chocolate chips

Coarsely chopped peanuts– these are for garnish on top, they will also add a bit of a crunch with each bite

Instructions

  • Mix peanut butter, powdered sugar, butter, vanilla, salt, and graham crackers (if desired) together
  • Scoop into small balls and roll until firm- not like a cookie
  • Freeze for at least 30 minutes
  • Melt butter & peanut butter chips together, you can either microwave or use a double boiler
  • Dip each ball into the topping mixture to completely coat, this is best when you use a tooth pick to stab the ball and dip it into the mixture
  • Sprinkle a small amount of peanuts on top of each ball before they cool

Inside

  • 3/4 cup Peanut butter
  • 2 cups Powdered sugar
  • 1/3 cup Butter
  • 1 tbsp Vanilla
  • 1/2 tsp Salt
  • 1/4 cup Crushed graham crackers optional

Outside

  • 3/4 cup Peanut butter chips
  • 3 tbsp Butter
  • Coarsely chopped peanuts optional garnish

Instructions
 

  • Mix all ingredients for the inside of the balls together
  • Scoop into small balls
  • Freeze for at least 30 minutes
  • Melt butter & peanut butter chips
  • Dip each ball into the topping mixture
  • Top with peanuts
