My husband and I love Thai food, but not the Thai spice! We were eating some curry at a Thai place when I realized- yellow curry would be such a cheap affordable meal to make myself.
Yellow curry is the easiest of curries because it doesn’t require a curry paste, instead it just uses spices. Yellow curry is a very mild curry- my husband can attest to this. If you are worried about spice, you can make your own curry powder and omit anything that you personally find too spicy. Curry is naturally gluten free and easily altered to be dairy free, vegan, or vegetarian.

Ingredients
Potatoes– The vegetable base of the curry. It gives it a heartiness. They should be chopped into square chunks.
Coconut milk– The canned kind of coconut milk is needed. This gives the curry a creamy flavor.
Coconut cream– I’ve had issues with coconut milk making the curry too thin, so my solution to this is to add one can of coconut cream.
Chicken– To make this recipe vegan you can omit the chicken, but this adds a great protein to the curry.
Curry powder– I make my own curry powder, but store bought powder works just as well.
Turmeric powder– Turmeric gives the curry its classic yellow color.
Ground coriander– Coriander has a specific flavor that helps the curry have a more deep flavor.
Salt– Salt brings out the flavor
Sugar– Sugar can be omitted, but it brings out a little sweetness
Butter– Butter can be omitted for a vegan or dairy free version. Or you can use dairy free butter. When adding the butter it adds a richness to the flavor of the curry
Garlic cloves– Garlic is a great flavor to add to almost any savory dish
Onion– These should be chopped coarsely as they are the only vegetable other than potatoes.
Rice– Rice is the best thing to serve yellow curry over. If you want a healthier option, try cauliflower rice. You can also try quinoa

Instant pot– if you want an instant pot, this is the one I have. It does everything I want it to
Slow cooker– if you want a slow cooker, crock pots are the top brand, but you can also use an instant pot on the slow cooker setting
Pan– I love using this pan for many dishes, it’s huge and deep enough to keep things in
Knife– I love this knife, it is affordable and does an amazing job cutting
Directions For Slow Cooker
Add all ingredients except chicken into the slow cooker
Cook on low for 6-8 hours or on high for 4-6 hours
Add the chicken in the last two hours of cooking
Serve over rice
Directions For Instant Pot
Add all ingredients except coconut milk and coconut cream to the instant pot
Add in ½ cup vegetable broth
Pressure cook for 6 minutes
Slow release for 5 minutes
Serve over rice
Directions For Stove Top
Cook chicken in a pan for 5-10 minutes, until cooked through
Add all other ingredients and bring to a boil for 2 minutes
Reduce to a simmer
Cook until potatoes are cooked through about 20 minutes
Serve over rice

Tips
- You can make a very simple version of this with just onions, potatoes, coconut milk, and curry powder
- Try adding different vegetables- look at the optional add in’s section
- Serve over quinoa, cauliflower rice, or brown rice
- Make this recipe dairy free by using either dairy free butter, or omitting it
- Make this recipe vegan by omitting the chicken and butter
- Change this recipe to be vegetarian by omitting the chicken
- Add chickpeas to make it have more protein if you omit the chicken for a vegan or vegetarian diet

- 3 cans coconut milk 15 oz
- 2 tbsp butter
- 2 garlic cloves crushed
- 4 cups potatoes
- 1 sweet onion medium diced
