Healthy Easy Green Mac N’ Cheese That Even Your Toddler Would Approve Of

If you are looking for a healthier mac n’ cheese that your kids will love, this is the answer! This green mac n’ cheese is creamy and full of greens that don’t affect the flavor of this beloved comfort food.

Ingredients

Cauliflower- use fresh or frozen florets

Spinach- fresh or frozen spinach will give your green sauce the color and lots of nutrients

Avocado- one small avocado will add a creamy texture

Cheese- a cheese that melts well like mozzarella or Colby is the best choice

Butter- Dairy free butter, or margarine can be used with little difference in the texture and flavor

Milk- Dairy free milk can be used, but it will affect the texture and flavor, cow milk is suggested

Spices- Salt, pepper, minced garlic, mustard powder, oregano

Optional spices are thyme & rosemary to taste

Noodles- use any kind of noodles you like or use chickpea noodles for more protein or Miracle Noodles for less calories, you can even use zoodles if you prefer

Instructions

Cook cauliflower by steaming, boiling, or roasting

Sauté spinach until wilted

Add veggies and avocado to a blender or use an immersion blender until well combined

Cook noodles to their instructions

Melt butter, milk, and cheese on the stove and add seasonings

Add in veggies and stir until combined

Pour over the pasta or combine with pasta to serve
