Mac and cheese is my favorite. I used to literally live off of it. When I was pregnant with my daughter and developed gestational diabetes, I needed to come up with a way to enjoy some low carb mac & cheese. This recipe has amazing flavor and all the comfort that mac and cheese provides.

Ingredients
Cauliflower– serve the sauce over riced cauliflower, or you can serve it over cauliflower florets
Butter– butter makes everything better
Cream cheese– for added creaminess
Heavy cream– some liquid for the sauce
Cheddar cheese– The most basic cheese
Mozzarella– for a smoother texture
Parmesan– a third kind of cheese to make the flavor more complex
Garlic powder– garlic makes everything better
Paprika– paprika tastes great with mac and cheese
Parsley– to give it a bit more flavor
Salt & pepper– as usual, salt and pepper are to taste

Pan– I love using this pan for many dishes, it’s huge and deep enough to keep things in
Grater– I have this mandolin and grater set that I love, it’s easier to clean than a box grater
Instructions
Cook cauliflower
Heat butter & cream cheese & heavy cream in a pan on medium heat until creamy
Add in cheeses & stir until blended
Add spices to taste
Serve over cauliflower
Tips
- I like to buy frozen riced cauliflower and heat it in the microwave
- Freeze extra sauce to enjoy later
- For a non-keto meal, serve over noodles
- For a more simple version of this recipe, only use one cheese and omit the seasonings and cream cheese
Whole30 Option
Okay, so there’s not a way to make Mac and cheese Whole30 because dairy is out when you’re on Whole30. But you can try out this major alteration to make an entirely new recipe!
1 cauliflower head cut
2 cups sweet potatoes diced
2 tbsp coconut oil
1 tbsp garlic powder
1 tsp paprika
1 tsp parsley
Salt & pepper to taste
Boil sweet potatoes until cooked through- about 15 minutes
Cook the cauliflower
Mash the sweet potatoes
Add oil, garlic, paprika, parsley, salt, and pepper
Add the mashed sweet potatoes over the cauliflower

- 12 oz cheddar cheese
- 4 oz mozzarella
